This easy keto spaghetti casserole is pure comfort food. Using veggie noodles instead of regular spaghetti noodles makes this keto dinner gluten free too. A rich meaty sauce and gooey cheese makes a delicious weeknight dinner with only 4 grams net carbs per serving.

I recently made a non keto spaghetti casserole for my family. I’ve never made that before and they really liked it so I decided to make this keto spaghetti casserole for me.

It was so tasty and I think it was because I used turnip noodles which were an excellent alternative to pasta. They had good texture and were firm like traditional spaghetti.

And the meat sauce and cheese brought it all together for an easy keto casserole. I even froze a few servings for a quick keto lunch or when I’m craving Italian food.

Recipe ingredients I used.

This recipe is very similar to make low carb Johnny Marzetti recipe. I just tweaked it a bit to make it more a baking casserole rather than a skillet recipe. I also used turnip noodles instead of zucchini noodles.

So the ingredients I used were lean ground beef, olive oil, onion powder, garlic powder, Italian seasoning, salt, black pepper, Rao’s marinara sauce, tomato paste, turnip noodles, cheddar cheese and mozzarella cheese.

Why I use turnip noodles and substitutions.

Turnips make the best noodles, especially in recipe like this that have other flavorful ingredients. I like turnip noodles because they are more sturdy than zucchini noodles and they don’t add excess water to the dish.

So even if you don’t like turnips, give them a shot in this dish because they take on the flavor of the meat sauce and with the added cheese you would never know they were turnips.

Other veggie noodles you can try are of course zucchini noodles but also spaghetti squash noodles. Palmini low carb noodles or Wonder noodles would also work.

How to make keto spaghetti casserole.

Step 1: Pre-heat oven to 350°F and spray a baking dish or casserole dish with nonstick cooking spray and set aside.

Step 2: Get out a large skillet and heat to medium heat. Add the olive oil and brown the ground beef. When it just about all browned, add in the spaghetti sauce, tomato paste and all of the spices. Mix well and cook for 2-3 minutes.

Step 3: Add the turnip noodles to the sauce mixture and mix together. Next add half of the cheddar and mozzarella cheeses and mix well then spoon into the prepared baking dish. Sprinkle the remaining cheese evenly over the meat mixture.

Step 4: Place the casserole into the hot oven and back for 30 minutes. Baking time may vary due to the thickness of your turnip noodles. Also if you are using other kind of keto noodles. Let the casserole rest for 10 minutes before serving. If you want you could also sprinkle some grated parmesan cheese on top but it’s not necessary. How to freeze leftovers.

I like to store leftovers in an airtight container like the one below in single servings so I can have a quick low carb lunch.I love these food store containers for recipes like this that freeze well.

This easy keto spaghetti casserole recipe will be your new favorite low carb casserole. It full of sturdy veggie noodles tossed in a rich meaty sauce and smothered in cheese. The perfect keto comfort food for busy weeknight dinners.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper
  • ½ teaspoon salt
  • ½ teaspoon Italian seasoning
  • ½ cup Rao marinara sauce (or other low carb marinara sauce)
  • 2 tablespoon tomato paste
  • 2 cups turnip noodles
  • ½ cup shredded mozzarella cheese
  • ½ cup shredded cheddar cheese

Instructions

    1. Preheat the oven to 350°F. Prepare a baking dish by spraying with nonstick cooking spray and set aside.
    2. Heat up a large skillet and to medium heat then add the olive oil and ground beef. Once the meat is just about all browned, add in the spaghetti sauce, tomato paste and all of the spices.
    3. Mix the meat sauce well and cook for 2-3 minutes to incorporate all the flavors. Add the turnip noodles to the pan and mix well and cook for 1-2 additional minutes
    4. Add half of both the cheddar and mozzarella cheeses and mix well. Then spoon the noodle mixture into the prepared casserole dish.
    5. Sprinkle the remaining cheese evenly over the noodles and place into the preheated oven. Bake for 30 minutes.
    6. Note - Cooking time may vary due to the thickness of your turnip noodles. Also if you are using other kind of keto noodles.
    7. Let the casserole rest for 10 minutes before serving. If you want you could also sprinkle some grated parmesan cheese or hot pepper flakes on top but it's not necessary.
