This double chocolate zucchini muffin recipe is a great way to sneak in extra vegetables as well as use the zucchini in your garden. Moist and delicious!

I love making anything where I can sneak vegetables in it and my children don't even notice! I know that every parenting guide out there will tell you to just force your children to eat vegetables or try 18,000 types of bribery, deals, etc to get your children to like vegetables, but they are their father's children and they just won't do it (although they are getting better as they get older).

And so, I am always happy when I find a recipe that they like and I know is getting some vitamins in to them (that is why I will make my pumpkin pancakes recipe and my pumpkin granola recipe!)

If you are planning your Spring garden, you might be thinking about growing zucchini. If you have never grown zucchini before, you might not know that, one day, it just seems like you have a ton of it and no idea what to do with it (especially if you grow more than 1 plant). This double chocolate zucchini muffin recipe can be a great way to use up all that zucchini (and the muffins can easily be frozen!)

Chances are, you already have everything in your pantry to make these - so all you need is the zucchini!

To make them, you will need:

  • 1 cup Flour
  • ½ cup Unsweetened Cocoa Powder
  • ¾ teaspoon Baking Soda
  • ¼ teaspoon Baking Powder
  • ¼ teaspoon Salt
  • ¼ teaspoon Cinnamon
  • 1 cup Chocolate Chips
  • 2 Eggs
  • ½ cup Vegetable Oil
  • 1 cup Sugar
  • 1 teaspoon Vanilla
  • 1 ½ cup raw grated Zucchini

Double Chocolate Zucchini Muffins

This double chocolate zucchini muffin recipe is a great way to sneak in extra vegetables as well as use the zucchini in your garden. Moist and delicious!

Ingredients

  • 1 cup Flour
  • ½ cup Unsweetened Cocoa Powder
  • ¾ teaspoon Baking Soda
  • ¼ teaspoon Baking Powder
  • ¼ teaspoon Salt
  • ¼ teaspoon Cinnamon
  • 1 cup Chocolate Chips
  • 2 Eggs
  • ½ cup Vegetable Oil
  • 1 cup Sugar
  • 1 teaspoon Vanilla
  • 1 ½ cup raw grated Zucchini

Instructions

  • Preheat the oven to 350

  • Spray or muffin tin with non-stick spray or line with paper liners (normally I am a fan of skipping the liners, but with the chocolate chips getting “gooey”, this is one time that I use them!)

  • Combine flour, cocoa powder, baking soda, baking powder, salt, cinnamon and chocolate chips.

  • In a separate larger bowl, whisk together the eggs, oil, sugar and vanilla until combined.

  • Stir the grated zucchini in the to egg mixture.

  • Gradually add the dry mixture in to the wet mixture until combined. Do not overmix!

  • Fill muffin tins about ⅔ – ¾ full.

  • Bake for 22-25 minutes or until a toothpick inserted into the center comes out clean.

  • Allow to cool for a several minutes in pan before removing to a cooling rack.
